Corn Bread Stuffing with Sausage & Dried Plums

Ingredients

3 tablespoons butter
2 cups chopped onion
1 cup chopped red bell pepper
2/3 cup chopped celery
1 cup of chopped turkey kielbasa or cooked sausage
1 1/2 cup frozen whole kernel corn, thawed

3/4 teaspoon black pepper
2 boxes corn bread-stuffing mix (8oz. each)
1 cup Mariani Dried Plums, coarsely chopped
1/4 cup chopped parsley
1 egg, beaten

Directions

Preheat oven to 400° F.

Melt butter in large non-stick skillet over medium-high heat.. Stir in onion, bell pepper and celery; cook 5 minutes, stirring frequently. Stir in kielbasa, corn, pepper and seasoning packets from stuffing mix. Add required water (from stuffing mix directions) and simmer according to directions on box. Pour vegetable mixture over corn bread stuffing mix, stirring well. Stir in plums, parsley and beaten egg. Toss well. Spoon stuffing into a 13 x 9-inch baking dish coated with cooking spray.

Cover and bake for 15 minutes. Uncover and bake an additional 15 minutes or until browned.
