Ingredients
1 cup Mariani Sweetened Dried Cranberries
2 tablespoons orange juice
3/4 cup butter or margarine
1/2 cup (each) granulated sugar, packed brown sugar
1 egg
1 cup all-purpose flour |
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon (each) pumpkin pie spice, ground cinnamon
1/2 cup (each) vanilla milk chips, coarsely broken pecans
1-1/3 cups quick oats |
Directions
Glaze: 3 ounces vanilla milk chips
3 to 4 tablespoons Mariani Sweetened Dried Cranberries, fine chopped
In a small glass bowl, stir together cranberries and orange juice, cook in microwave on high power for 1 minute. Set aside. In a mixing bowl, cream butter, sugar, and brown sugar; beat in egg until well mixed.
Stir in reserved cranberries; add flour, baking powder, baking soda, pumpkin pie spice, and cinnamon. Stir in milk, vanilla chips, pecans, and oats. Using 1/8 cup scooper, drop onto un-greased insulated cookie sheet or roll into balls; flatten slightly. Bake at 375°F oven for 10 to 12 minutes or until golden brown.
Remove from cookie sheets after 2 minutes and place on cooling rack. Serve cookies plain or if desired, in a glass bowl, cook vanilla chips in microwave on high power for 20 to 30 seconds, and stir until smooth. Drizzle over cooled cookies, sprinkle with chopped cranberries.
