Ingredients
1 1/2 cups canned pumpkin
1 cup sugar
1 cup oil
3 eggs
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda
3/4 teaspoon nutmeg
3/4 teaspoon salt
2 packages (4 3/4 oz. each) Instant Vanilla Pudding
1 1/2 cups chopped Mariani Apricots
1 1/3 cups chopped walnuts |
Directions
Mix together pumpkin, flour, baking powder, baking soda, cinnamon, nutmeg, salt and Instant Pudding. Fold in Mariani Dried Apricots and walnuts.
Bake at 350° F for one hour. Test with toothpick.
