1 cup chopped Mariani Ultimate Apricots
1 cup boiling water
1 cup granulated sugar
1 cup sour cream
1/2 cup butter or margarine
2 cups flour
1 teaspoon baking soda
1 tablespoon orange peel (zest)
1/2 cup chopped pecans
1/2 cup powdered sugar
1 tablespoon orange juice
1/2 teaspoon butter or margarine
Preheat oven to 400o F
Soak apricots in boiling water for 5 minutes. In large bowl cream sugar and butter until fluffy. Add sour cream and mix well. Combine dry ingredients and stir into cream mixture until moistened. Drain apricots, discard liquid. Fold in apricots and nuts.
Fill paper lined muffin cups ¾ full. Bake 18 to 20 minutes or until done.
Glaze: Combine powdered sugar, orange juice, butter and a little grated orange zest to form a light glaze. Spread on muffins.
Yields one dozen muffins.
